Salzburger Nockerin - Salzburg Soufflé

Ingredients
1/2 cup butter
8 eggs, separated
3 tablespoons flour
1/2 teaspoon vanilla
1/2 cup sugar
1/4 cup hot milk
confectioners sugar
Method
Cream butter, add egg yolks and flour and beat until light and fluffy. Beat egg whites very stiff, gradually adding sugar and vanilla. The success in making a soufflé depends largely on the stiffness of the egg whites. Fold egg whites into the yolks. Pour milk into a baking dish, pour in egg mixture and bake in a pre-heated 350° oven for 10 minutes until top is lightly browned. Remove in big spoonfuls to a serving dish, dust with confectioners sugar and serve.
