Paprika Potatoes
Serves 4
Ingredients
2 lb potatoes, peeled and cubed
3 tablespoons lard or butter
1 1/2 teaspoons paprika
1 cup onion, chopped
1/2 teaspoon vinegar
1 tablespoon flour
1 cup beef broth or water (approx)
1/2 teaspoon caraway seeds
salt and pepper to taste
Method
Heat lard or butter in a saucepan, stir in paprika, add onion and sauté until golden brown. Stir in flour and broth, add potatoes and more liquid if needed to nearly cover the potatoes. Add caraway seeds, vinegar salt and pepper, cover and simmer until potatoes are cooked.
