Kaiserchmarren - Emperor's Omelette
Serves 2
Ingredients
2 cups milk
1 1/2 cups flour
4 eggs, separated
1/4 cup sugar
1/2 teaspoon lemon juice
pinch salt
8 tablespoons melted butter
2 tablespoons raisins
Method
Blend milk and flour and stir until smooth. Blend in beaten egg yolks, sugar, lemon juice, salt and 4 tablespoons melted butter. Just before cooking fold in stiffly beaten egg whites and raisins. Heat some of the remaining butter in a pan, pour batter in - about 1 inch high. Cook over a medium heat until one side is light golden, turn and cook the other side. Tear with 2 forks in small pieces, continue to cook for half a minute.
Make more omelettes until batter is used up. Sprinkle with sugar before serving.
