Fried Mushrooms
Serves 6
Ingredients
18 medium sized firm mushrooms
1/3 cup flour
1/4 teaspoon salt
2 eggs, beaten with 2 tablespoons milk and 1/2 tablespoon oil
1 cup golden breadcrumbs
1/3 cup oil
1/3 cup butter
lemon wedges
parsley
Method
Cut stems off mushrooms (discard or use in soups or stews). Wipe mushroom caps with a clean damp cloth. Blend salt into flour. Dredge mushrooms in flour, dip in beaten eggs and roll in golden breadcrumbs, shake off excess crumbs and stand for half an hour. Heat oil and butter in a skillet. The fats should be about 1/2 inch deep - add more if necessary. Sauté mushrooms until golden brown on all sides. Drain on paper towel. Garnish with lemon wedges and parsley.
