Creamed Spinach
Serves 6
Ingredients
3 lb spinach
1/4 cup water
1/2 teaspoon salt
3 tablespoons butter
3 tablespoons flour
1 clove garlic, crushed
1/2 cup milk (approx)
pinch of grated nutmeg
salt and pepper to taste
Method
Wash spinach well, trim off tough stem. Put 1/4 cup water and 1/2 teaspoon salt in a saucepan, add spinach and boil until soft. Drain well and rub spinach through a strainer.
Heat butter, add flour, garlic nutmeg, stir and sauté for 2 minutes. Do not let brown. blend in milk, add spinach, salt and pepper, blend well and cook for 2 or 3 minutes until hot.
