Stuffed Peppers
Serves 4
Ingredients
4 large green peppers
1/3 lb minced beef
1/3 lb minced pork
1 egg, lightly beaten
1/3 cup raw rice
1/2 small onion, grated
salt and pepper to taste
1 cup tomato sauce (canned)
1 cup beef or chicken broth
1 teaspoon paprika
1 tablespoon sugar
1 tablespoon vinegar
salt to taste
Method
Cut stem end off peppers, seed and blanch them for a couple of minutes in boiling water. Combine meats, egg, rice, onion, salt and pepper. Fill peppers with this mixture. Stand pepper upright and close together in a sauce pan. Combine all other ingredients and add to pan. The liquid should come nearly to the top of the peppers. Cover and cook gently for about one hour. Add more vinegar and sugar of needed; the sauce should have a tangy sweet and sour taste.
