Stuffed Eggs
Serves 8
Ingredients
8 hard boiled eggs
1 tablespoon Dijon mustard
1 tablespoon butter, softened
2 tablespoons mayonnaise
Salt and pepper to taste
1 teaspoon paprika
1 tablespoon grated onion
1 teaspoon chives
1 teaspoon capers, drained and chopped
16 rolled anchovy fillets
Method
Shell eggs and cut lengthwise, remove yolks. Rub through a strainer and blend well with all ingredients except anchovies. Fill each egg half with this mixture and top each half with an anchovy fillet.
