Cucumber Salad
Serves 4
Ingredients
4 cucumbers (medium size)
1 1/2 tablespoons salt
1 clove garlic, crushed
1/2 teaspoon sugar (or more to taste)
3 tablespoons cider vinegar
1 tablespoon dill, chopped (optional)
1 teaspoon paprika
Method
Peel cucumbers, slice very thinly, put in a bowl, blend in garlic and salt and let stand for 2 or 3 hours. The cucumbers will release quite a bit of liquid. Discard liquid and press cucumbers as dry as possible. Blend with sugar and vinegar, mix in dill if desired, sprinkle with paprika and chill well before severing.
