Fresh Watermelon Salad
Mix up a savory and sweet combination of juicy watermelon, feta and pine nuts and finish with a balsamic dressing.

INGREDIENTS
4 cups seedless watermelon, diced in 1/2”-3/4” pieces
1/2 cup (4 ounces) feta cheese, crumbled
1/4 cup pine nuts, toasted
2 tablespoons fresh mint, chopped
2 tablespoons white balsamic vinegar, or more to taste
Freshly ground black pepper, to taste
INSTRUCTIONS
Combine watermelon, pine nuts and white balsamic in a large bowl and toss.
Top with crumbled feta cheese, mint and ground pepper.
Transfer to plates and serve immediately.
Tip: Save even more time on this already speedy recipe by purchasing pre-cubed watermelon in your grocery store’s produce department and dice into smaller pieces.
