Zwetsckenknodel - Plum Dumplings
Serves 4
Ingredients
1 1/2 lbs potatoes
1 1/2 cups flour
1 egg
2 tablespoons butter
pinch of salt
4 ripe Italian plums
sugar cubes
4 tablespoons butter
1 cup white breadcrumbs
1/4 cup sugar, mixed with 1.4 teaspoon cinnamon
Method
Boil and mash the potatoes. While still warm mix with flour, egg, 2 tablespoons butter and salt; knead well. Roll out to 1.2 inch thick and cut into 4 squares. Make a cut in the plums, remove pits and replace with a small cube of sugar. Put a plum in each dough square, fold dough corners over plumbs. seal edges well and shape into round dumplings. Cook in gently boiling water, stirring once in a while, for about 10 minutes. When the dumplings rise to the surface they are done. Sauté breadcrumbs in 4 tablespoons butter until golden. Drain dumplings, put on a serving dish, pour buttered breadcrumbs over them sprinkle with cinnamon sugar.
Note: Small ripe apricots can be used instead of plums.
