Plum Cake
Serves 4 to 6
Ingredients
1 cup butter
4 eggs
1 cup sugar
1 teaspoon grated lemon peel
1/4 teaspoon cinnamon
1 tablespoon rum (optional)
1 1/2 cups flour, sifted
1 lb Italian plums (approx)
confectioners sugar
Method
Beat butter until creamy, add eggs, sugar, lemon peel, cinnamon and rum and beat until light and fluffy. Mix in flour, blend well and spread 3/4 inch thick on a greased and floured baking tin. Cover neatly with halved plums and bake at 325° for 20 to 25 minutes. Remove from oven sprinkle with sugar while still warm. Serve warm or cold.
Note: Other fruit such as halved apricots, pitted cherries or sliced peaches can be used instead of plums. Soak dried fruit can also be used.
