Potato Goulash
Serves 4
Ingredients
1/4 cup salt pork
1 large onion, chopped
1 tablespoon paprika
1 tablespoon flour
1 cup of beef broth
1 teaspoon vinegar
1/2 teaspoon caraway seeds
2 lb potatoes, peeled and quartered
3/4 lb smoked pork or sausage, sliced
Method
Sauté salt pork until light brown, add onion sauté until golden. Stir in paprika, flour and gradually add broth. Stir until smooth. Add all other ingredients, bring to the boil, cover and cook gently for about 20 minutes until potatoes are done. Stir once or twice while cooking.
