Beef Goulash
Serves 6
Ingredients
5 tablespoons lard
1 1/2lbs onions, sliced
3lbs beef shin or chuck, cut in 2 - inch cubes
1 tablespoon paprika
1/2 cup beef broth or water
1 teaspoon tomato paste
1/2 teaspoon caraway seed
1/2 tablespoon vinegar
salt and pepper to taste
Method
Heat lard in a heavy saucepan, add onion and sauté until onions are a pale yellow. Stir in paprika, add beef mix well, all all other ingredients, cover and cook gently for about 2 1/2 hours until meat is done.
Serve with boiled potatoes or rice.
