    Gipsy Goulash

    Serves 6

    Ingredients
    1/2 cup lean bacon, diced
    1 lb onions, chopped
    1 clove garlic, chopped
    1 1/2 lbs beef shin, cubed
    1 lb lean pork, cubed
    1 lb lamb shoulder, cubed
    1 tablespoon paprika
    1/2 teaspoon caraway seed
    1/2 teaspoon marjoram
    salt and pepper to taste
    1 1/2 tablespoon vinegar
    1 tablespoon tomato paste
    1 cup beef broth or water

    Method
    Sauté bacon in heavy saucepan or kettle pan until golden, add onion and garlic and cook until onions are soft. Add beef sauté for a few minutes, add paprika, caraway seed, marjoram, salt, pepper vinegar, tomato paste and 1/2 cup of broth or water. Cover and cook gently for 30 minutes. Add other meats, mix well add remaining broth or water or more liquid is necessary, cover again and cook for one hour longer or until meats are soft.
